
Walnutter Banana Cake
We always have over-ripe bananas in our kitchen so this is a great way to use them. This is a super easy cake to make - light and moist - for all the family to enjoy!
Ingredients

3 medium overripe bananas (mashed)

1 cup organic butter (softened)

1 cup Walnutter walnut kernels

2 medium free-range eggs (beaten)

1 teaspoon organic vanilla essence

1 cup organic raw sugar (or we love organic raw coconut sugar)

¼ cup milk or use your preferred plant-based milk

1½ cups organic self-raising flour / or preferred gluten free variety

1 extra banana sliced for decoration on top of cake

Extra walnuts and/or other nuts of your choice (including pecans) to sprinkle on top for decoration
Method

Preheat oven to 180ºC/360ºF

Grease and line a large cake or loaf tin.

Use kitchen beaters to cream the butter, sugar and vanilla essence.

Add the eggs, milk, bananas, walnuts and then self-raising flour, and blend well after each ingredient is added.

Pour the mixture into the tin and bake.

Slice another banana lengthways and layer it on top, then sprinkle some extra nuts on top for decoration.

Cook for about 45 minutes or until the cake looks golden brown. Insert a skewer in the middle of the cake to confirm the batter is cooked and not sticking to the skewer!
